Haven’t had the opportunity to dive deeper into the game yet but I’m struggling to understand the weapon system…how do you know which one is the best for your current character? Through stats? Of each character has their own weapon?

if u look at the first page in the character profile it will say it on the right window. u have ur hp, atk, skill damage etc. and there will be written things like greatsword/dual pistols or polearm/shotgun etc. then those weapons are best for the character in general and then the polearms themselves for example have different effects which make them good or bad for a character. for rebecca her best polearm is sirens kiss (found in shop) but the jade halberd is fine for now too

From what I’ve seen the basic answer is because the game was originally planned to be a gacha it’s easiest to pick what looks like the weapon that would have been with a characters banner. If you don’t have access to said weapon or don’t want to grind for it then look at a character’s skills and determine what weapon would be beneficial to those skills.
